In my last post, I specifically talked about carrots and beta carotene. To repeat, beta carotene (abundantly found in carrots) is explicitly tied to vitamin A production in the body.

Vitamin A is crucial to healthy vision (especially at nighttime) because the retina needs it to detect light and adjust vision.

If you’re looking for a beta carotene/vitamin A boost, or if you’re simply considering a unique way to enjoy carrots, try the following recipe for a Colorful Shaved Carrot, Beet, & Radish Salad with honey-lemon dijon dressing.

Ingredients

For the salad:

  • 4 carrots (peeled, cut into two)
  • 4 beets (peeled)
  • 1 bunch of radishes (trimmed & cleaned)
  • 3 scallions (sliced)
  • 1/4 cup of fresh cilantro (finely chopped)

For the honey-lemon dijon dressing:

  • 1/4 cup of apple cider vinegar
  • 4 tablespoons of organic extra virgin olive oil
  • 1 fresh lemon (for the juice)
  • 3 teaspoons of dijon mustard
  • 1 & 1/2 teaspoons of raw honey
  • 1/2 teaspoon of sea salt
  • Freshly ground black pepper (to taste)

Instructions:

The Dressing – preparing the salad dressing is the easy part. Simply mix all the ingredients (except for the lemon) together in a bowl. Set aside when finished. Keep the lemon handy for later.

The Salad – prepping the vegetables will be slightly more time consuming. In this case, the carrots, beets, and radishes should be thinly sliced. This step will be much easier if you own a mandolin or a food processor (with a slicing disk).

When the dressing and the salad are ready to go, gently toss it all together. Add in the scallions & parsley. Cut the lemon in half and squeeze the juice from both halves on top. Make sure to add more salt & pepper as needed.

Plate accordingly once the contents of the salad are evenly coated with dressing.

Quick Note – The picture above isn’t indicative of what the final outcome should look like. Remember, the carrots should be shaved (long ways) and the beets and radishes should be thinly sliced in circular shape.
